Ayurvedic dietetics (Ahara) is considered one of the three health pillars. Food must be adapted to individual constitution (Prakriti) and current imbalance (Vikriti).
Six Tastes (Shad Rasa)
- Madhura (sweet): Nourishes, builds. Increases Kapha
- Amla (sour): Stimulates digestion. Increases Pitta
- Lavana (salty): Hydrates, stimulates. Increases Pitta and Kapha
- Tikta (bitter): Purifies, detoxifies. Decreases Pitta and Kapha
- Katu (pungent): Stimulates, warms. Decreases Kapha
- Kashaya (astringent): Dries, tightens. Decreases Pitta and Kapha
